Spicy Chicken Spaghetti

3 tablespoons extra virgin olive oil, divided
10 chicken tenderloins
salt and pepper to taste
1 (26 ounce) jar spaghetti sauce with mushrooms
1 (14.5 ounce) can Italian diced tomatoes, undrained
1 red bell pepper, diced
1 (15 ounce) can whole kernel corn, drained
1 (10 ounce) can whole black olives, drained
1/4 cup canned jalapeno pepper slices, undrained
1 1/2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon ground black pepper
1 (16 ounce) package angel hair pasta
1 tablespoon butter
Heat 2 tablespoons olive oil in a skillet over medium-high heat. Place chicken in the skillet, season with salt and pepper, and cook 6 minutes on each side, until juices run clear. Set aside, and keep warm.
In a large pot, mix spaghetti sauce, tomatoes with liquid, red bell pepper, corn, olives, and jalapenos. Bring to a boil, and season with garlic powder, onion powder, and 1 teaspoon pepper. Place chicken in the pot. Reduce heat to low, cover, and simmer 15 minutes.
Bring a large pot of lightly salted water to a boil. Place pasta in the pot, and cook 2 to 4 minutes, until al dente. Drain, transfer to a bowl, and toss with remaining olive oil and butter. Spoon the sauce over the pasta to serve.

Tomatoe Pie
9″ 1 – 9″ pie crust – deep pan
med 2 – tomato’s sliced
med 2 – onions sliced
1/2 cup – Parmissan cheese
1/2 cup – Monterrey Jack Sheese
1/2 cup – colby cheese (your choice)
10 fresh – fresh basil leaves
pinch – salt
pinch – pepper
1 cup – mayo
Directions
oven 350,
bake pie crust 10 to 12 minutes
mix mayo, cheese, salt and pepper
In baked pie crsut
Layer Tomatos, onion, cheese mix, break up basil and add,
layer again
bake 40 minutes. Let stand about 10 min. Before serving.
Frito pie

1 lg. Bag corn chips
2 cans chili with beans
1 sm. Onion, chopped
1 c. Shredded cheese
Mix above ingredients together. Place in baking dish; top with cheese. Bake at 350 degrees 10-15 minutes until cheese melts.

Your mom should be very proud of you for helping her with dinner. Here are some suggestions.

Cheeseburger Macaroni
1 pound of hamburger
1/4 c. Chopped onion (optional)
1/3 c. Ketchup
1 1/2 c. Water
1 pkg Velveeta Shells and Cheese Dinner
1. Brown hamburger with onion (optional) in large skillet; drain
2. Place hamburger in skillet, stir in 1 1/2 c. Water, ketchup, and shell macaroni.
Bring to a boil. Reduce heat to medium low; cover. Simmer 10-12 minutes or until macaroni is tender.
3. Add velveeta cheese sauce; stir until melted.

Yummy Meatballs

1 pkg of Frozen Meatballs
jar of apricot preserves
envelope of lipton onion soup
bottle of catalina or french dressing (i prefer catalina)
Mix all the ingredients together and add to meatballs.
Bake for 30-40 minutes at 350 degrees
Or on low in a crockpot for 3-4 hours. Serve over buttered noodles, rice or mashed potatoes.

Mini Hotdogs
1 small pkg of lil smokies
American Cheese Slices
2-3 pkgs of crescent rolls
Open the crescent rolls and tear at the perforations. And then cut triangles in half to make 16 triangles per package. Cut each American slice into thirds. Add a slice of cheese on triangle and then place smokie on top and then roll dough to form a little crescent. Bake in oven at 375′ for 10 minutes.

SAVORY HERB WITH GARLIC BAKED PORK CHOPS
1 envelope Lipton Recipe Secrets- Savory Herb with Garlic Soup Mix*
1/3 cup plain dry bread crumbs
4 pork chops, 1 inch thick
1 egg, well beaten
Preheat oven to 400′. In small bowl, combine soup mix and bread crumbs. Dip chops in egg, then bread crumb mixture until evenly coated. Arrange chops on baking sheet. Bake uncovered 20 minutes or until done, turning once.

Simple Pot Roast
pot roast
potatoes-peeled and cut into chunks
baby carrots
canned whole green beans-optional
can of cream of mushroom
lipton onion soup envelope
soup can of water
place roast in roasting pan, place veggies around roast, mix soups and water and pour over roast and veggies. Cook for about 1-2 hours, depending on size of roast. 400 degree oven. Serve biscuits to sop up gravy… Can also cook this in a crock pot for 4-6 hours on low
